Is it possible to change the colour of the conservation histogram and the conservation numbers underneath? If so, how?

Currently it isn't possible, although you can export the conservation histogram and modify the colours that way, but it would require a bit of scripting. If this is particularly urgent then let me know what your after and I might be able to put a quick patch together to do what you need.
